Chef Mark Carruth has been cooking professionally from the time he was just a teenager. As a young chef, he worked in several fine restaurants in Colorado resort towns, including the Sushi Den, while studying at the Institute of Arts/School of Culinary Arts to expand his professional skills.

Prior to joining Five Spice, Mark spent a decade honing classic French cooking techniques, while serving as head chef in several well-known Portland restaurants. “Whatever the genre of food,” Mark says, “I strive to make every dish the absolute best it can be.” We are delighted to have him working his culinary magic here at Five Spice.
