FIVE SPICE RECIPE
What is Five-Spice?
Five-spice powder is a mixture of spices popularized in Chinese cuisine. Five-spice adds a delicious accent to many dishes such as our special Five-Spiced squid.
To prepare the Five-Spice
- In a un-oiled dry skillet, roast 2 teaspoons of peppercorns (preferably Szechuan or sub with black peppercorns) by shaking the pan over low to medium heat until the aroma of the peppercorns is released (about three minutes).
- Grind the roasted peppercorns together with 8 star anise (or sub out 4 teaspoons of ground anise) in a blender or pepper mill.
- Strain the blended seasonings.
- Mix in 1/2 teaspoon of ground cloves, 1 tablespoon of ground cinnamon, and 1 tablespoon of ground fennel seed.
- Grind all seasonings together until they become very fine.
- Store the five-spice in a good airtight container.
Fried Five-Spiced Squid Preparation
After you make the five spice, mix your wonderful creation with the flour below...
- Season flour with Five-Spice, Salt and Pepper.
- Dip cleaned squid in the seasoned flour mixture.
- Flash fry in sesame oil for 2 minutes.
- Serve with Ponzu sauce and spicy Aiolo.
